Cooking While Quarantining

Since I’ve been living in my own apartment, I’ve actually had a superb time finding new meals to cook (and cooking classic meals I remember my mom cooking.) Before the move, I swore I was going to be living off Cup Noodles for a few years, but once you have your “own” kitchen, you definitely find your groove. I found myself cooking in no time!

Now, if you’ve been cooking for awhile, you know you’ve got your own favorite meals on rotation. Spaghetti, tacos, salad, and others all happen at least twice a month. I mean, you know you’re good at it, so why try making something new? I already had my favorite meals on rotation, but this quarantine definitely threw a wrench in it. Since I was home 25/8, My rotation started becoming shorter and I was eating the same meals 2x a week! So, I decided it was definitely time for some change. Here are some of my favorite meals from my quarantine cooking experimentation. Here is cooking while quarantining- where anything goes, and you probably won’t ever have time to make these extravagant meals again!

Meal 1: Vodka Sauce and Gnocchi

What you’ll need:

Chicken (or any meat/no meat of your choice), Spinach, Mushrooms, Gnocchi pasta, Vodka sauce, Seasoning of your choice, Pepper flakes, and Parmesan cheese

How to:

First, you will need to grill/cook your chicken in a pan or skillet. Once it is finished, set it to the side. Then, you’ll use your pan to sear your mushrooms. Once it’s done, add your vodka sauce. At the same time, you can start boiling your water for the pasta. Once the water is boiling, add the gnocchi (this cooks really fast.) Once the pasta is done, add it to the heating sauce. You’ll add the spinach last because it cooks so fast. Then, stir in pepper flakes for some spice! Add to your spicy preferences. I added the chicken on top when serving, then parmesan cheese. This was definitely a wing-it meal because I had never tried vodka sauce before, but I loved it!

Meal 2: Wonton Soup

What you’ll need:

Shrimp, Garlic, Ginger, Soy Sauce, Oyster Sauce, Miso paste, Dumpling wrappers, Leeks, Mushroom, Green onions/Veggies, Chicken broth, Water, and Sesame Oil

Meal 3: Pambazos

What you’ll need:

Guajillo peppers, Lettuce, Chorizo or Steak, Potatoes, Onions, Bolillo bread, Garlic, Vegetable oil, Seasonings, and Toppings of your choice

Steak/Beef, Soy Sauce, Brown Sugar, Onion, Ginger, Garlic, Red Pepper Flakes, and Sesame Oil

Chicken, Rice, Panko Crumbs, Eggs Flour, Seasonings of your choice, Onion, Potato, Carrots, Vegetable or Canola Oil, and Japanese Curry roux
